We Californians like our food fresh. And now, local olive growers are providing yet another garden-fresh option. It’s called olio nuovo—early harvest olive oil that’s pressed, bottled, and sold just days after the olives are picked.
A centuries-old tradition in Italy, olio nuovo can be found from local producers such as Olivina, Wente, and Hillcrest Ranch in November and December. The taste captures the oil’s sharp, grassy, peppery flavor at its most robust, says Olivina’s Charles Crohare: “It’s fresh, it’s strong to the nose, and it can definitely be lively on the tongue.”
