And O Olive Oil has a corner on the market: O’s new Porto is the only port vinegar out there. “It has the flavor of balsamic but a lighter texture,” says O’s marketing director Shelly Haygood. “It’s lovely on summer salads.” But the Lafayette resident’s favorite use of the vinegar, which sells for about $10 a bottle, is as part of a yummy-sounding appetizer. “I love to drizzle a little on top of crostini with goat cheese. Mmmm, it’s so delicious!”
