Local author creates an easy-to-use resource for making your favorite foods healthier

Classics like meatloaf, tamale pie, even scrambled eggs and hashbrowns are great for your budget but—prepared the traditional way—not so great for your health. East Bay-resident and cookbook author Mollie Katzen and YOU-series author Michael Roizen, MD, (one of Oprah’s favorite doctors) have teamed up with the California Walnut Board to create healthy takes on many popular dishes.

"You don't have to give up your favorite dishes for healthy eating," says Katzen. "You can tweak a little here and there and make your macaroni and cheese absolutely fine to eat." The Smart Menu Campaign’s Macaroni Italiano substitutes low-fat cottage cheese and parmesan cheese, and adds Omega-3–rich toasted walnuts to create a tasty, healthier version of this comfort-food favorite.

Just click on walnuts.org/smartmenus for recipes like Vegetable and Walnut Pizza, Brilliant Chili, and Smart Spaghetti and Meatballs, which uses ground turkey—less expensive and lower in saturated fat than ground beef. The site also highlights general tips for healthier cooking, with a video of Roizen explaining the health benefits of walnuts, and Katzen with some of her dishes.
