The Sushi King

Behind the name E Sushi.

There’s a rumor among Yelpers that the E in Dublin’s E Sushi stands for Elvis. Actually, it’s for enjoy, but it’s not surprising that people have come to the wrong conclusion.

The restaurant’s chef, Tanaka Ting—whose 30-year East Bay sushi career includes a stint at Walnut Creek’s Fujian—presides over a case of pristine seafood with a sculpted pompadour hairdo that would put the King to shame. “A lot of people have asked to touch my hair,” he says. “It’s real. There’s a lot of hairspray.”

Ting started styling his hair this way when he lived in Osaka, Japan, but customers told him it reminded them of Elvis. So he perfected it. Customers also provided the memorabilia on display inside E Sushi, including Elvis posters, guitars, and dolls. The soundtrack is the King’s hits, and you can even order the All Shook Up or Love Me Tender roll.

But beyond the fun, Ting has a serious approach to sushi, with fresh fish flown in from all over the world and served with house-made sauces.
