Kombucha

A local kombucha maker gives us the scoop on this trendy probiotic drink.

Kombucha, a probiotic drink with ancient roots touted for its medicinal qualities, has been making a major comeback. Emeryville resident Lev Kilun, of Lev’s Original Kombucha, gave us the lowdown.


Diablo: What is kombucha?

Lev Kilun: It must consist of fermented tea. The goal is to form a symbiotic relationship between yeast and bacteria so the yeast will create alcohol, and the bacteria converts the alcohol into beneficial acids.

Is kombucha alcoholic?

Kombucha is supposed to be sour ... if you add too much sugar, it gets converted to alcohol, potentially up to .5% [the legal maximum to not be considered alcoholic]. 

Are there health benefits?

There are regulations about making health claims, but basically the drink’s function is detoxification. Kombucha is considered by some to be a hangover cure; it’s also said to contain good bacteria or organisms that help with digestion. But before jumping into the probiotics world, you should try it and make sure it works for you.

Is this just a fad?

It’s become trendy, but I always say that kombucha was here 3,000 years before and it will probably be here for 3,000 years after.
