Try the Caspian salmon smothered in cumin and tarragon, or the fesenjan chicken, sautéed breast meat with pomegranate sauce and crushed walnuts. And you can’t go wrong with the ever-popular kebobs: the Persian (koobideh) features spices so interesting, you’ll be transported to another continent.
