This casual eatery specializes in pho, the traditional Vietnamese beef soup with thin rice noodles. The dish (pronounced fuh) is a build-your-own experience, as you can choose your fillings—thin slices of steak, brisket, flank steak, tripe, or beef meatballs are typical—and then top the bowl off with garnishes such as fresh bean sprouts, Thai basil, cilantro, sliced fresh jalapeños, and a squeeze of lime. You can also punch up your soup with the dark, hot pepper–laced hoisin sauce at each table. If you’re not a red meat eater, opt for banh canh ga, a Vietnamese chicken soup with boneless chicken pieces and rice noodles.
