It had been so long since we’d dined at Prima, the restaurant’s excellence had become almost an abstraction. But with our first taste of ahi crudo served carpaccio style with hints of mint and hot chile, the truth of it became certain. Every course that followed elicited an, “Oh, that’s how it’s supposed to be done.” Each was an exemplar of that dish and of the season: silky slices of duck breast, sweet and supple butternut squash ravioli, and a lamb shank perfumed with aromatic fall vegetables. The service reflected the ambience—relaxed, confident, and refined—with the staff’s energy rising as the dining room filled. There’s a reason why Prima’s reputation has lasted decades.
