Infamous in America for being the effortless staple of penniless college students, ramen becomes glorious at Hiroshi. The Hiroshi tonkotsu ramen starts with a deeply flavorful broth of chicken and pork simmered for at least 15 hours. Traditional toppings include chashu: tender pork belly that has been grilled, braised, sliced, and finished with a blowtorch. A golden soft-cooked egg floats alongside strands of black kikurage mushrooms and gorgeous lotus root slices. Add or subtract toppings, and choose from ramen made with broths of light chicken or creamy sesame and pork. Izakaya-style appetizers are offered at dinner, including takoyaki, a party on a plate starring octopus dumplings. Gracious servers oversee the narrow eight-table dining room (plus counter seating).
