Try the rich, many-textured New York roll, which is shrimp, avocado, and flying fish roe, or the spider roll (soft-shell crab fried light and crispy). Sakana even stocks varieties of sushi fish that some restaurants don’t bother with because they’re only available seasonally, such as meltingly tender toro, also known as fatty tuna. Black-lacquer tables and booths, blond wood chairs, rice-paper globe lanterns, and modest decorations courtesy of the Kirin beer company create a bright, easy, authentic feel.
